Taste & colour
Delicate, balanced, low in bitterness.
Matcha from the first harvest in Aichi prefecture. The bushes are shaded for twenty to thirty days before picking. The leaves hold on to their chlorophyll and build L-theanine, while the catechins that make matcha bitter recede.
You notice it in the cup straight away: deep green, a round taste, umami instead of bitterness.
How it is made
Shading, steam, granite.
The youngest leaves and buds are picked. Within a few hours they are steamed — around twenty seconds stops the oxidation and locks in the colour. The leaves are then de-stemmed into tencha and ground on granite stones: slowly, at about thirty grams an hour.
The stone stays cool, so neither taste nor aroma suffers. The powder ends up with a particle size of five to fifteen micrometres. It travels to us by air, not by sea — days, not months, between the mill and your bar.

Drinking it neat
A bowl, a whisk, 2 g. A taste that needs neither milk nor syrup.
Matcha latte
The delicacy of ZEN carries through milk without disappearing into sweetness.
A steady serving
2 g is quick to measure out. Your cost per drink stays clear.
Preparation
Four steps to a smooth foam.
- Sift 2 g of matcha through the Chakoshi sieve so that no lumps form.
- Add 40 ml of water at up to 80 °C. Boiling water only makes the taste bitter.
- Whisk with the Chasen in a W motion until a fine foam forms.
- Serve it neat. For a gentler start, top it up with a little milk.
