Taste & colour
Caramel and toasted nuts instead of grass.
Hojicha is a Japanese green tea that is roasted before grinding. The leaves darken to a warm brown and the taste turns towards caramel, toasted nuts and a gentle earthiness.
Roasting lowers the caffeine, so it also fits the afternoon and evening menu. One portion takes 2 g and is whisked just like matcha.
In service
A latte for the second half of the day.
Hojicha latte
Whisk 2 g in a little water, top up with hot milk, plant-based if you like.
Iced version
Whisk in lukewarm water, add ice and cold milk.
Less caffeine
Something for guests who no longer want coffee after lunch.
Preparation
As easy as matcha.
- Sift 2 g of hojicha through the Chakoshi sieve.
- Add 40 ml of water up to 80 °C and whisk with the Chasen bamboo whisk.
- For a latte, top up with hot or cold milk.
- For the iced version, whisk in lukewarm water, then add ice and milk.

First harvest from Aichi. The most delicate in the range, for drinking neat and for latte.

FLOW · premium grade
A bolder taste that carries through milk. For lattes and iced drinks.

YUM · culinary grade
Third harvest. Bold and more bitter, made to stand out in a recipe.
